Tasting Notes

The wine shows a beautiful bright ruby color. On the nose, dried cranberry and raspberry mingle with hints of tobacco and baking spices. Fresh and vibrant on the palate, it has smooth, ripe tannins that carry through to the finish.

Terroir

The Pays d’Hérault is shaped by the Hérault River, which starts high up at 1,400m and carves out the stunning Gorges de l’Hérault over 148km before reaching the sea. The soils and climate here are perfect for growing grapes that are rich, ripe, and full of flavor. The vines are around the southern villages of Cruzy and Cébazan, and most of them are about 40 years old. Low yields from these Carignan vines, combined with the ideal terroir, mean the grapes develop a really deep, complex aroma.

Winemaking

Once the grapes have been harvested, stems are completely removed. At which point a portion of the crop undergoes a hot maceration for 10 hours extracting colour, tannins and fruity aromas. This is followed by gentle pressing to liberate the juice, which then undergoes traditional fermentation. The other portion follows a traditional winemaking process. 50% of the wine is aged using French oak for 5 months. The wines are then blended before being bottled.

Accidental But Outstanding Red Wine

Tried this wine 'by accident' - it was a bottle left over from a works Xmas party in January that my partner hadn't actually attended, but was given it when he went into work the next day.

It had already been opened for 24 hours and my comment was "if it's no good we'll use it for cooking". Well the first sip and we were both blown away and literally couldn't stop drinking it! It was so smooth and just the right balance of everything.

We ended up finishing the whole bottle over the course of the evening and because it is only 12.5% we weren't pickled either.

Just to say we don't drink much so half a bottle each is a big deal!

We are getting married in August and immediately knew this was the red for the wedding, so ordered 7 bottles (yes a very small wedding!).

Honestly the best red wine we have ever tasted.
