Tasting Notes

A beautiful pale pink colour with an aroma of summer berries and fresh flowers. On the palate, it's bright and refreshing, with hints of ripe citrus and wild strawberry, all lifted by a gentle, elegant fizz.

Terroir

The vineyards sit on clay-limestone hillsides and terraces, with the nearby Pyrenees helping to cool the Mediterranean climate. Vines aged 20 to 40 years produce grapes full of depth and character. With yields under 50 hectolitres per hectare, the focus is on quality over quantity, ensuring each grape reflects the rich terroir and unique microclimate of the region.

winemaking

The winery incorporates traditional winemaking practices with temperature-controlled stainless steel tanks to maintain precision throughout. Harvest is exclusively done by hand, ensuring the selection of the finest grapes. Grapes undergo direct low and slow pressing. Pinot Noir is vinified both as blanc de noir and as red wine before blending. The wine undergoes lees ageing for a minimum of 24 months, enhancing complexity and depth, resulting in wines that truly reflect the essence of their terroir and vintage.
